Sugar – In Reasonable Amounts?

Many people struggle with sugar, after all, it's one of the most highly addictive foods out there.

Perhaps your New Year's resolution includes giving up (or reducing) the amount of processed sugar in your diet.

In this brief video, Dr. John McDougall discusses how to use natural sugar in small, reasonable amounts when consuming it along with starch (oatmeal, whole grain pancakes, and so on). Doing so is fine for most people.

If you're a sugar addict, however, all refined sugars are best eliminated totally. Fruit and dates are a great way to satisfy your sweet tooth or sweeten recipes, too. Here's a simple Chocolate Caramel Shake recipe - sweetened only with bananas - which is delicious, and satisfying:

1.5 cups unsweetened plant milk
2 small frozen bananas (peel bananas, cut into chunks, freeze)
2 TBS cacao powder (or cocoa)
¼ tsp. caramel extract

Blend all in a high-powered blender until smooth. To make the shake sweeter, add a few pitted dates . To thicken the shake AND add sweetness, add additional chunks of frozen banana. To thin the mixture, add a bit of plant milk. Tweak as you go.

Which plant milk should you buy?

Have you noticed how many plant milks are available on the market today? It's no surprise - the demand for non-dairy milks is growing, with sales up more than 60% over the past five years.

Of course this is bad news for dairy farmers. According to this article in the Milwaukee Sentinel Journal, Wisconsin lost 500 dairy farms in 2017, and so far this year, nearly 350 have stopped milking cows. The American Dairy Coalition continue their lobby efforts to persuade the FDA to stop allowing the definition of "milk" to include plant-based beverages. The topic remains a contentious issue.

If you consume plant-based milks, such as almond, cashew, coconut, soy, rice, hemp, oat, and others, which are your healthiest options?

This article by Dr. Thomas Campbell lists the pros and cons of different varieties and offers advice about their use. We personally use plant milks on cereal, oatmeal, and in baking/cooking, with unsweetened almond milk being our preference. Because soy and coconut milks are higher in fat, they work better in "creamy" soup recipes; but if you do purchase soy milk, be sure it's organic.

Of course, you can always make your own plant-based milks very easily in your blender  - there are dozens of recipes online. This one has worked for us (when I'm in the mood to make it): 4-1/4 cups water, 2 TBS almond butter, 1/2 tsp. vanilla, 1/8 tsp. salt. Blend until smooth and drain through a paint strainer to remove the grit. Store in jars and shake before use.

Comfort Food? This recipe delivers!

In the mood for something creamy and different?  We tried a new recipe this weekend that has been added to our "Favorite" list!  The combination of home-made cashew cream, zucchini, spinach, elbow pasta and the resulting chili sauce made for an excellent combination.  The liquid smoke is optional, but I did add a couple of drops and it was delicious.  This is another home-run from "The Vegan 8" website.  Eight ingredients or less - my kind of recipe!

The Healthiest Airport Food
