In the mood to grill some ribz?

Are you looking for some healthy ribs which are easy to make and oh-so-delicious? Then you won't regret giving Barbecued Seitan Ribz a try!

This recipe from The Fat Free Vegan website is definitely going into the "keeper" file.

Seitan (say-tan´) is another name for wheat gluten, which is a food made from the main protein of wheat. Also known as "wheat meat," seitan is a popular meat replacement because of its texture and versatility.

Wheat Gluten (or Vital Wheat Gluten) can often be found in your local health food stores (including Whole Foods, Fresh Thyme, the Fruitful Yield, etc) or you can easily purchase it on line. Bob's Red Mill is the brand I use, but some stores may carry it in bulk.

The recipe makes 16 ribz, so you may want to double it. Four ribz are considered a serving (and one serving has nearly 28 grams of protein!) Of course, it's impossible to be protein-deficient while eating a whole food, plant-based diet, but just one serving of this recipe could provide about half your daily requirement.

The recipe calls for Smoked Spanish Paprika, but I just used regular Smoked Paprika, which I bought at Berkots in the produce section. Also, instead of grilling, I chose to bake this recipe as outlined in the directions - but I'm sure they'd be awesome grilled, too.

If you serve with smashed potatoes and gravy, try this Golden Gravy Recipe by Mary McDougall! Add a salad or a cob of sweet corn and you're all set!

Yummy “Crab” Patties

Do you ever feel like you're in a cooking rut? I do. And so last week I tried two new recipes. One was found on the Vegan 8 website called "Spicy Grilled Crab Patties with Aioli"  (although it's not a Vegan 8 creation - it's one that she tested from another chef; it has more than 8 ingredients, but it's still a fairly easy recipe).

This is the first time I've ever made "crab" patties, and I must say I was very happy with the results! The recipe has hot sauce and jalapeno but was still just right for my palate (I'm typically a sissy when it comes to hot spices). The patties are meant to be grilled, but you can also bake them as I chose to do. I ate two of them right out of the oven, and had to stop myself from eating a third!

The aioli sauce is the perfect compliment, too. In fact, this thick sauce could be used as a sandwich topper for other patty or burger recipes as well.

Here are my notes and suggestions:

  • I made thirteen small to medium sized patties from this recipe
  • For "seaweed snacks", I used 1.25 full sheets of seaweed which I purchased at Walmart in the Asian section (see photo). Crumble the sheets up into your food processor before processing into small flakes.
  • This was the first time I'd ever used "Old Bay" seasoning. Here's a photo in case you go hunting for it.
  • Try to find whole-grain Panko breadcrumbs with minimum ingredients (and no oil).
  • Substitute water in the recipe wherever oil is called for.

This is definitely a "keeper" recipe which will probably be available for taste-testing at our next potluck!

PS: At the start, I mentioned that I tried TWO new recipes. The other recipe also turned out great, and I'll share that soon. If you're a fan of Italian Sausage, you'll want to stay tuned!

Do you live in a “blended” dietary household?

Do you live in a "blended" household where some choose a plant-based diet and others don't? Perhaps this article will provide a few tips.

One caveat: I don't believe every solution listed in this article would work for everyone. I do know several families that make their "blended" households work in other ways (for example, asking the meat eaters to prepare their own food, and making other agreements ahead of time regarding shopping, cooking and food storage).

Movie Review: “Eating You Alive”

If you know anyone on the fence about plant-based eating, or if you ever need to refresh your commitment to a whole food, plant-based (WFPB) diet, you will want to see the documentary “Eating You Alive.”

Image result for images of eating you aliveThe film featured interview clips from many big names in the plant-based world (Drs. Campbell, Esselstyn, Greger, McDougall, Fuhrman, Barnard, Ornish, and Stoll) plus many other lesser-known doctors who promote plant-based eating in their practices.

But the main thrust of the film was testimonials from LOTs of real-life patients who had been seriously ill and/or morbidly obese. Their health had spiraled downward to the point of being scheduled for radical surgeries or debilitating treatment, and most were told they only had a short time to live. Their ailments ranged from heart disease, stage 4 cancers, lupus, rheumatoid arthritis, type 2 diabetes, autoimmune diseases and much, much more. Doctors had told them their conditions were genetic and nothing could be done to change their outcomes. And most of them skeptically turned to a WFPB diet as a last resort before succumbing to further treatment. Their lives were completely changed. It's truly amazing how the body can heal when given the right nourishment.....many of the people couldn’t get through their testimony without shedding a few tears!

The film also discussed the dangers of consuming oils, how our government is influenced by (and subsidises) the meat and dairy industries, how drug makers influence (and train) our doctors, the dangers of consuming dairy, the myth surrounding athletes and animal protein, how animal agriculture affects our environment, and how horribly factory animals are treated (it's truly heartbreaking).

Celebrities that were interviewed included Penn Jillette (of Penn and Teller - see photo at right), Samuel L. Jackson, and director James Cameron and his wife. All told their stories of how a WFPB diet impacted their lives.

Very short cooking demos were given by Brandi Doming (the Vegan 8 website): Garlic Alfredo Sauce; Lindsay Nixon (Happy Herbivore): Cauliflower Hot Wings; and Miyoko Schinner made her Mac and Cheese recipe.

At the end, the directors discussed 10 Steps to Success with a Plant-Based Diet:
1) Make the decision
2) Extend the Invitation (to family, co-workers, friends)
3) Consult your physician (your meds will need adjustment)
4) Hydrate, hydrate, hydrate! (Women: 4 to 7 glasses of water; men: 6 to 11 glasses)
5) Make a plan. Throw out the bad food!
6) Shop to drop (produce aisle, label reading to avoid sugars and oils)
7) Execute the plan
8) Move it! Daily exercise, does not need to be excessive
9) Expecting the unexpected (Detox symptoms such as headaches, fatigue are short term)
10) Learning for Life (keep learning, use Dr. Greger’s site or the Daily Dozen app)

Overall I give this film a definite thumbs up! Although much of the material was familiar to me, I was definitely moved by the patient's testimonials and am convinced - once again - that everyone should hear this information in order to make informed healthcare decisions. As one doctor put it: "You don't have to be sick and you don't have to wait for a terminal illness. You can do something about it!"
